- 1 pack Sympli Yam Cubes
- 1 sardine
- ¼ red bell pepper
- ¼ green bell pepper
- ¼ red onion
- 2 eggs
- 2½ seasoning cubes
- 1 teaspoon black pepper
- 1 teaspoon dry parsley
- 125g bread crumbs
- 125g flour
- 1 tablespoon butter
How to Prepare Yam and Fish Cakes using Symplinatural Recipes.
Bring 235mL water to boil in a medium pot; add Sympli yam cubes and cook for 8 mins.
Transfer the yams to a mixing bowl and mash with butter.
Add black pepper and seasoning cubes to the mixture; stir evenly and set aside.
Chop the bell peppers and onions, and add to the mashed yam mixture. Add parsley to the mashed yam.
Finally mash the sardine and mix with the yam. Set aside.
In 3 bowls, place eggs, bread crumbs and flour separately.
Now using your hands, scoop some yam mixture and roll in to a small flat disc. Dip it in the flour, then in the eggs, and then into the bread crumbs, rolling it around evenly.
Place gently into heated pan with oil.
CAUTION: The oil may bubble and pop out of the fryer. Place only one cake at a time into the hot oil. Fry only moderate amounts of frozen food at a time, making sure to remove freezer burn or any excess ice before cooking. If frozen pieces get stuck together, they should be allowed to defrost slightly and then broken up before inserting into hot oil. DO NOT LEAVE UNATTENDED WHEN FRYING.
Fry evenly on both sides till it turn golden brown.
