- 2 packs Sympli Yam Fries
- 1 can mixed vegetables
- Vegetable oil
- 8 medium tomatoes
- 5 fresh peppers
- 1 sachet tomato paste
- 4 seasoning cubes
- Bay leaves
- 2 large onion
- Curry powder
How to Prepare Yam Fries with Mixed Vegetables and Chicken.
Blend the fresh tomatoes, peppers and ginger together to a purée and set aside.
Heat up 2 tablespoons of vegetable oil in a pan. Dice 1 onion and add to the pan with curry powder and thyme.
Pour in the blended purée, and add 2 seasoning cubes and salt. Allow to fry for about 6 minutes. Add the bay leaves, and fry for another 3 minutes. Set aside.
Wash the chicken, and place in a pot. Add 2 seasoning cubes and salt; allow to cook for 15 minutes. Next, add some vegetable oil to fry the chicken, turning each side evenly until golden brown. Set aside.
Heat 3 tablespoons of oil in another pan. Add the second onion, sliced, and mixed vegetables. Add curry powder and thyme to taste, and sauté for 5 minutes, stirring frequently. Set aside.
Tear open 2 packs of Sympli fries into a bowl, and toss with salt. Add 50cl of vegetable oil into frying pan and allow to heat up for 4 mins before adding the fries.
CAUTION: The oil may bubble and pop out of the fryer. Place only one piece at a time into the hot oil. Fry only moderate amounts of frozen food at a time, making sure to remove freezer burn or any excess ice before cooking. If frozen pieces get stuck together, they should be allowed to defrost slightly and then broken up before inserting into hot oil. DO NOT LEAVE UNATTENDED WHEN FRYING.
Fry, turning frequently, for about 7 mins.
Serve Yam Fries alongside mixed vegetables and tomato sauce. Enjoy!
