Ingredients

  • Sympli Ripe Plantain Slices
  • 6 eggs
  • 3 medium tomatoes, chopped
  • 2 small fresh red peppers, chopped
  • 1/2 medium onion
  • 1 medium green bell pepper, diced
  • 2 garlic cloves, minced
  • 4 tbsp of vegetable oil
  • 1/2 tsp of curry powder
  • 1/4 tsp of thyme
  • 1 seasoning cube
  • 1/2 tsp of ground pepper
  • Salt to taste

How to Prepare Yam Fries, Fried Plantain & Egg Sauce ;

Yam Fries, Fried Plantain & Egg Sauce

Heat the vegetable oil in a large frying pan, and add chopped onions. Sauté for one minute, and add the minced garlic. Sauté for another 20 seconds until fragrant.

Add the chopped tomatoes and fresh red pepper; stir thoroughly to combine, and leave to simmer for 4 minutes on medium heat. Add curry powder, thyme, seasoning cubes, ground pepper and salt. Stir to combine all ingredients, and leave to cook for another 4 minutes, or until there is no trace of water in the sauce.

Meanwhile, break six eggs in a mixing bowl and add a pinch of salt. Whisk to combine.

Add the egg mixture into the pan. Do not stir it in — allow to form on top of the sauce, and gently use a spatula to spread it over the sauce. Leave to cook for 2 minutes on low heat.

Now stir the sauce to combine ingredients. Taste for salt, and adjust if needed.

Finally, stir in the diced green bell pepper, and turn off heat immediately.

Fried Plantain

Heat 475mL vegetable oil in a frying pan.

In a mixing bowl, add Sympli Ripe Plantain Slices and season with salt. Mix thoroughly to combine.

Using a cooking tong, gently drop ripe plantain piece after piece into the hot oil, being careful not to overcrowd the pan. Fry on both sides for 3-4 minutes until lightly browned.

Yam Fries

Pour Sympli Yam Fries into a mixing bowl season with salt. Mix thoroughly to combine.

Add additional oil to the frying pan if needed, and fry yam fries for 7 minutes on high heat.

CAUTION: The oil may bubble and pop out of the fryer. Place only one piece at a time into the hot oil. Fry only moderate amounts of frozen food at a time, making sure to remove freezer burn or any excess ice before cooking. If frozen pieces get stuck together, they should be allowed to defrost slightly and then broken up before inserting into hot oil. DO NOT LEAVE UNATTENDED WHEN FRYING.

Serve yam fries, fried plantain and egg sauce side by side.
