• 1 pack Sympli yam cubes
  • 3 tablespoons vegetable oil
  • 1 onion bulb, diced
  • 2 garlic cloves, minced
  • 3 large carrots, julienned
  • 5 fresh tomatoes, diced
  • 1 tablespoon tomato paste
  • 2 fresh peppers, chopped
  • ½ teaspoon curry powder
  • ¼ teaspoon thyme
  • 1 seasoning cube
  • ½ teaspoon ground pepper
  • 600g baked beans
  • Fresh parsley or cilantro for garnish
  • Salt to taste


How to Prepare Yam Cubes in Baked Beans Sauce.

Heat up 235 ml of water in a small pot and add yam cubes. Cook till 50% done for about 4 minutes.

Heat up vegetable oil in a wok on medium heat. Sauté onions for one minute. Stir in minced garlic, sauté till fragrant. Add shredded carrots, stir and combine, sauté for one minute. Stir in tomatoes and fresh pepper, leave to simmer for 3 minutes.

Stir in tomato paste, thyme, curry powder, ground pepper, seasoning cubes and a pinch of salt. Add baked beans, stir to combine and allow to cook for another 2 minutes.

Afterwards, add yam cubes, cover pot and leave to simmer for another 5 mins. Finish off dish by garnishing with fresh parsley or cilantro.
