- 500g Sympli Yam Cubes
- ¼ teaspoon thyme
- 2 eggs
- ¼ teaspoon crushed chili flakes
- 1 seasoning cube
- ¼ teaspoon black pepper
- 150g flour
- 125g bread crumbs
- 1 sardine
- Salt to taste
- Vegetable oil for frying
Bring one cup (250 ml) of water to a rolling boil, add thyme, crushed chili flakes, seasoning cube, black pepper and salt to taste, stir to combine. Then add Sympli yam cubes. Leave to cook for about 8 minutes or until tender.
While it is cooking separate yolk from egg white and oil from sardine, set aside.
When yam is cooked, drain water and transfer yams to a mixing bowl. Using a masher, mash yams completely till a smooth texture is formed.
Next add egg yolk, and sardine, stir again to combine.
Whisk egg white thoroughly and transfer to mixing bowl. Stir thoroughly to combine and set aside.
Prepare breading items. Place flour, remaining egg and bread crumbs in three different plates.
Place vegetable oil in a pan (just enough for a shallow fry) and allow to heat up.
Scoop out some yams with an ice cream scoop and use your palms to gently roll it into a ball.
Deep in flour, then egg wash and finally bread crumbs…repeat this until the mashed yams are exhausted.
Afterwards transfer yam balls to hot oil in batches and allow to fry for about 2-3 minutes or until golden brown.
Afterwards, transfer to a platter lined with kitchen paper towel to absorb excess oil…
Repeat the process till yam balls are exhausted.
