  • Sympli ripe plantain
  • 350g low sugar shortcrust pastry
  • 70g granulated sugar
  • ¼ tsp salt
  • ½ tsp fresh nutmeg, grated
  • ½ tsp cinnamon
  • ¼ tsp ground ginger
  • Pinch of ground cloves
  • 2 eggs
  • 25g melted butter
  • 95ml milk
  • 1 handful cashew nuts (Optional)
  • Whip Cream (Optional)


How to Prepare Sweet Spiced Plantain Pie.

Pre-heat the oven to 200°C/400°F.

Place the plantain, sugar, ginger, cloves, cinnamon, nutmeg, salt, eggs, butter and milk into a food processor and blitz until smooth.

Roll out the pastry and place it into a 9 inch/23cm diameter solid pie plate.

Reduce the oven temperature to 180°C/350°F.

Pour the filling into your pastry case and bake for 35-40 minutes.

Remove the pie from the oven and place on a cooling rack.

Serve warm or chilled. Goes nicely with mildly sweetened whipped cream or roasted cashew nuts.
