- 2 Packs of Sympli African Yam Cubes
- 8 eggs
- 3 medium tomatoes, chopped
- 2 small fresh red peppers, chopped
- 1/2 of a medium sized onion bulb
- 1 medium green bell pepper, diced
- 2 garlic cloves, minced
- 4 tablespoons vegetable oil
- 1/2 teaspoon curry powder
- 1/4 teaspoon thyme
- 1 seasoning cube
- 1/2 teaspoon ground pepper
- Salt to taste
Preparation
How to Prepare Spicy Egg Sauce with Yam using the Symplinatural Recipes
Spicy Egg Sauce with Yam;
Heat up the vegetable oil in a large frying pan, and add chopped onions. Sauté for one minute, and add the minced garlic; sauté for another 20 seconds or until fragrant.
Next, add the chopped tomatoes and fresh red pepper; stir thoroughly to combine, and leave to simmer for 4 minutes on medium heat.
Then add curry powder, thyme, seasoning cubes, ground pepper and salt. Stir to combine all ingredients, and leave to cook for another 4 minutes, or until there is no trace of water in the sauce.
Meanwhile, break six eggs in a mixing bowl and add a pinch of salt. Whisk to combine.
Next, add the egg mixture into the pan. Do not stir it in — allow to form on top of the sauce, and then gently use a spatula to spread it over the sauce. Leave to cook for 2 minutes on low heat. Then stir into the sauce to combine.
Taste for salt, and add more to taste if required.
Finally, stir in diced green bell pepper for a pop of color, and turn off heat immediately.
Heat up 2 cups of water in a medium pot.
Add 2 packs of Sympli Yam Cubes and cook for five minutes.
Drain water completely and serve hot.
Serve boiled yam cubes and egg sauce side by side.
