- 1 packet Sympli ripe plantains
- 384g of all-purpose flour
- 2 tsp. vanilla extract (optional)
- 3 tsp. dry yeast
- 256g of warm water
- 64g of cold water
- 1/2 tsp. salt
- Oil for deep-frying
How to Prepare Plantain Puff Puff
Thaw Sympli ripe plantain. Cut open, and add 64g (1/2 cup) of water. Blend into a smooth paste.
Pour plantain purée into a large bowl, add 2 teaspoons of vanilla extract and 1/2 a teaspoon of salt. Mix well, and set aside.
In another bowl, mix yeast with water and allow to activate for 3 to 5 minutes.
Pour flour in a bowl, make a well and pour plantain purée mixture into it. Stir while adding yeast mixture bit by bit until mixture is smooth.
Cover mixture with a clean kitchen cloth, and allow to rise. This should take 20 to 30 minutes if the above-mentioned processes were followed well.
Once dough has risen, heat up good amount of vegetable oil in a deep skillet or pot. Fry plantain puff puff till golden brown making sure to stir from time to time.
Enjoy with hot pepper sauce.
