Ingredients
- 120g all-purpose flour
- 3 eggs
- 1 pack Sympli ripe plantain
- 1 teaspoon brown sugar
- 130g corn flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- 236ml milk
- 2 tablespoons vegetable oil
- 150g dry raisins
- Maple syrup
- Butter
Preparation
How to Prepare Plantain Muffins.
Preheat oven to 180 degrees centigrade. Place Sympli ripe plantains in a mixing bowl and allow to thaw completely.
Sift flour and corn flour into a mixing bowl, add sugar, salt and baking powder, stir to combine.
Next, place thawed plantains in a blender with vegetable oil, eggs and milk and blend till smooth.
Transfer plantain mixture into flour mixture. Mix till well combined and add some raisins and stir a little.
Next, transfer mixture into baking tray lined with muffin paper wraps, top with dry raisins.
Place in pre-heated oven and allow to bake for 15 minutes or until golden brown.
Afterwards, set on a cooling rack and allow to cool completely.
Melt butter and maple syrup, use mixture to glaze muffin tops as desired.
