• 160g butter
  • 120g icing sugar
  • 2 eggs beaten lightly
  • 225g plain flour
  • 1 tbsp baking powder
  • 1/2 tbsp soda bicarbonate
  • 220g Sympli Ripe Plantain Slices (cooked and mashed)
  • 1/4 tbsp vanilla or banana extract
  • Juice from 1/2 lemon


How to Prepare Plantain Loaf using Symplinatural Recipes;

Plantain Loaf;

Stir butter and sugar together until light and creamy. Slowly add in eggs, and beat the mixture until creamy.

Add mashed plantain and banana/vanilla extract; mix well.

Add cake flour, baking powder and soda bicarbonate; beat until they are mixed through.

Pour the prepared batter into an 20cm loaf pan. Bake at 175°C for 50-60 minutes, or until fully cooked.

Allow to cool on rack. To garnish, top with a mixture of 112g icing sugar and 2tbsp lemon juice.
