• 2 packs Sympli Ripe Plantain Slices
  • 1 tbsp olive oil
  • ½ medium onion, thinly sliced
  • 1 scotch bonnet, chopped
  • ½ medium red bell pepper, sliced in strips
  • ½ medium green bell pepper, sliced in strips
  • 2 medium fresh tomatoes, chopped
  • 3 garlic cloves
  • ¼ tsp curry powder
  • 1/8 tsp thyme
  • 1 seasoning cube
  • ¼ tsp ground pepper
  • 8 large eggs
  • 160g chopped sausage
  • Salt to taste 
  • Vegetable oil for frying


How to Prepare Plantain Frittata using Symplinatural Recipes;

Heat up 500mL vegetable oil in a frying pan.

In a mixing bowl, add Sympli Ripe Plantain Slices and salt to taste. Mix thoroughly to combine.

Next, gently drop plantain piece after piece into the hot oil; be careful not to overcrowd the pan so the temperature of the oil doesn’t drop. Fry on both sides for 3-4 minutes or until lightly browned. Set aside.

CAUTION: The oil may bubble and pop out of the fryer. Place only one piece at a time into the hot oil. Fry only moderate amounts of frozen food at a time, making sure to remove freezer burn or any excess ice before cooking. If frozen pieces get stuck together, they should be allowed to defrost slightly and then broken up before inserting into hot oil. DO NOT LEAVE UNATTENDED WHEN FRYING.

In a skillet, heat up olive oil on medium heat. Sauté onions, garlic, and tomatoes and scotch bonnet for about 3 minutes. Add curry powder, thyme, seasoning cube, ground pepper, sausage and salt to taste. Leave to cook for another 3 minutes.

Finally, add the bell peppers and allow to simmer for 2 minutes, then take off heat and set aside.

In a large mixing bowl, whisk eggs and add sautéed vegetables, season with salt and pepper according to preference. Stir to combine all ingredients.

Pour mixture into a 10-inch greased baking pan or casserole dish. Lay the fried plantain gently on top of the egg mixture.

Bake in a 350 degree F pre-heated oven for about 25-30 minutes or until mixture is firm in the center. After baking, let it cool for few minutes before serving.
