• 1 pack Sympli Ripe Plantain Slices
  • 3 Sympli Sombo Chilli
  • 3 Sympli Atarodo Chilli
  • 30g Sympli Tatase Chilli
  • 6 shrimps (deveined & cleaned)
  • 750g uncooked rice, parboiled
  • 350mL water or chicken stock
  • 5 onions, diced
  • 4 onions, sliced
  • Vegetable oil
  • 150g fresh green peas
  • 150g tomato puree
  • 3 medium tomatoes, sliced
  • 2 cubes of seasoning (Chicken flavour)
  • 1/2 tsp thyme
  • 1/2 tsp curry powder


Plantain (Dodo), Shrimp & Jollof Rice using symplinatural recipes;

Grind the Tatase chilli, Sombo chilli, Atarado chilli, fresh tomatoes and diced onions together until a smooth paste is formed. Set aside.

Heat oil in a saucepan, add half of the sliced onions, and fry until golden brown. Add into the smooth paste. Add seasoning, curry, thyme, and a little salt. Stir, and cook for 15 minutes.

Add tomato puree & prawns. Fry until the pepper sauce is cooked.

Add the parboiled rice and water/stock, stir to combine all ingredients, and leave to simmer on medium-low heat.

Cut enough foil paper to cover the pot; then, top with a lid. Using the foil paper helps trap the steam inside the pot, which allows the rice to become soft quickly (in about 5 minutes) without getting soggy.

Once the rice is completely cooked, remove the lid and foil paper. Add sliced tomatoes, salt and the remaining sliced onions. Stir to combine, and once the water has dried, sprinkle in the green peas. Allow to cook for two minutes, and then take the pan off the heat.


Heat up 50cl of vegetable oil in a frying pan.

In a mixing bowl, add Sympli Ripe Plantain Slices and salt to taste. Mix thoroughly to combine.

Gently drop plantain piece after piece into the hot oil, and be careful not to overcrowd the pan. Fry on both sides for 3-4 minutes or until lightly browned.

CAUTION: The oil may bubble and pop out of the fryer. Place only one piece at a time into the hot oil. Fry only moderate amounts of frozen food at a time, making sure to remove freezer burn or any excess ice before cooking. If frozen pieces get stuck together, they should be allowed to defrost slightly and then broken up before inserting into hot oil. DO NOT LEAVE UNATTENDED WHEN FRYING.

Serve Jollof rice with fried Sympli plantain.
