How to Prepare Jollof Rice & Fried Plantain using Symplinatural Recipes;

Jollof Rice & Fried Plantain

Wash rice thoroughly, and parboil. When rice is 70% cooked, transfer to a colander and wash again thoroughly to remove excess starch. Set aside.

Combine fresh tomatoes, fresh pepper, red bell peppers, tomato paste, ginger, garlic and onions in a blender or food processor. Add a little water if needed.

Preheat vegetable oil in a pot, and pour in tomato mixture. Stir fry until the water dries out and the oil visibly bubbles on top.

Next, stir in 475mL chicken stock (or water), curry powder, thyme, seasoning cubes, nutmeg, ground pepper, white pepper, crayfish and salt to taste. Stir thoroughly, and leave to simmer for 5 minutes. Add parboiled rice and stir to combine evenly.

Cut enough foil paper to cover the pot; then, top with a lid. Using the foil paper helps trap the steam inside the pot, which allows the rice to become soft quickly (10 minutes) without getting soggy.

Once the rice is completely cooked, remove the lid and foil paper. Add tomato and onion rings for garnish. Stir to combine.

Remove from heat and allow to cool down by covering pot halfway with the lid.

Fried Plantain

Heat up 50cl of vegetable oil in a frying pan.

In a mixing bowl, add Sympli Ripe Plantain Slices and salt to taste. Mix thoroughly to combine.

Gently drop plantain piece after piece into the hot oil, and be careful not to overcrowd the pan. Fry on both sides for 3-4 minutes or until lightly browned.

CAUTION: The oil may bubble and pop out of the fryer. Place only one piece at a time into the hot oil. Fry only moderate amounts of frozen food at a time, making sure to remove freezer burn or any excess ice before cooking. If frozen pieces get stuck together, they should be allowed to defrost slightly and then broken up before inserting into hot oil. DO NOT LEAVE UNATTENDED WHEN FRYING.

Serve Jollof rice with fried Sympli plantain.
