• 640g rice
  • Sympli Ripe Plantain Slices
  • 3 medium carrots
  • 2 fresh red chilli peppers
  • 1 large red bell pepper
  • 1 large green bell pepper
  • 1 bunch spring onions
  • 160g sweet corn
  • 1 medium onion bulb
  • 4 garlic cloves
  • 1 inch root ginger
  • 1½ tbsp curry powder
  • 1/2 tsp thyme
  • 4 seasoning cubes
  • ¼ stick unsalted butter
  • ½ tbsp white pepper
  • ½ tbsp ground chilli pepper

How to Prepare Fried Rice, Shrimps And Plantain Recipe;

Fried Rice

Wash rice thoroughly, and parboil with 100cl chicken stock and one tablespoon curry powder. Cook till it is 95% cooked.

Meanwhile, mince the garlic, and chop the spring onions, carrots, bell peppers and onions.

Preheat some vegetable oil and add onions, followed by garlic. Sauté till translucent and fragrant.

Next, add the diced carrots; cook for about 2 minutes. Add the cooked rice, and stir to combine. Add the chopped fresh chilli pepper, the remaining curry powder, thyme, seasoning cubes, white pepper and ground chilli pepper. Stir to combine all ingredients, and leave to simmer on medium-low heat.

Cut enough foil paper to cover the pot; then, top with a lid. Using the foil paper helps trap the steam inside the pot, which allows the rice to become soft quickly (in about 5 minutes) without getting soggy.

Once the rice is completely cooked, remove the lid and foil paper. Add spring onions, sweet corn and green bell pepper. Stir to combine, and take off the heat.


Melt unsalted butter in a frying pan, and swirl it to fully coat the pan. Season shrimps with salt and pepper, and add to frying pan on medium-low heat. Allow to cook on one side for about 2 minutes; then flip, and allow to cook on the other side for another 2 minutes. Take off heat and serve on a platter.


Heat up 50cl of vegetable oil in a frying pan.

In a mixing bowl, add Sympli Ripe Plantain Slices and salt to taste. Mix thoroughly to combine.

Gently drop plantain piece after piece into the hot oil, and be careful not to overcrowd the pan. Fry on both sides for 3-4 minutes or until lightly browned.

CAUTION: The oil may bubble and pop out of the fryer. Place only one piece at a time into the hot oil. Fry only moderate amounts of frozen food at a time, making sure to remove freezer burn or any excess ice before cooking. If frozen pieces get stuck together, they should be allowed to defrost slightly and then broken up before inserting into hot oil. DO NOT LEAVE UNATTENDED WHEN FRYING.

Serve fried rice with shrimps and fried plantain.
