- 1 Pack Sympli ripe plantain
- 300ml vegetable oil for frying
- Salt to taste.
- 185g white rice
- 1 tablespoon curry
- ½ tablespoon unsalted butter
- 1 seasoning cube
- Salt to taste
Pour 480ml of water in a pot, and allow to boil on medium heat.
Wash rice thoroughly with warm water.
Add curry to boiling water, add washed rice and butter, sprinkle some salt and seasoning cube, allow to cook until rice is tender, more water can be added if necessary.
Set aside when done.
Heat up vegetable oil in a frying pan or deep fryer.
Empty a pack of Sympli ripe plantain into a mixing bowl. Season with salt. When oil is hot, carefully place plantains in hot oil, and fry on both sides until golden brown.
Scoop plantains out of oil and place in a plate lined with paper towel to drain excess oil.
Enjoy curry rice with fried plantain and any sauce of your choice.
