- 1kg goat meat (cut in small pieces)
- 120mL cooking oil
- 1 tsp minced garlic
- 1 tsp minced ginger
- 1 medium onion, sliced
- 4 Roma tomatoes, diced
- 3–4 tsp curry powder
- 1 tsp white pepper
- 1 tsp smoked paprika
- 1 tsp chopped fresh thyme
- 2 tbsp parsley
- 2 green onions, sliced
- 1 pack Sympli Bell Pepper (Atarodo)
- 1 tablespoon bouillon (optional)
How to Prepare Curried Goat Stew using symplinatural Recipes.
Boil goat meat with salt, pepper and some chopped onions in a medium pot until tender. The goat will take approximately 60-90 minutes to cook. (A pressure cooker can be used to shorten the process.) Reserve the stock for later use.
Add 60mL oil to the pot, and brown the goat for 5-10 minutes.
Add the chopped onions, ginger, and garlic to perfume the oil and meat; continue frying the meat for 1-2 minutes. Be careful not to let the garlic burn.
Next, add the diced tomatoes, curry powder, white pepper, smoked paprika, Atarodo pepper and fresh thyme. Stir the pot frequently to prevent the sauce from sticking to the pot.
Add 500mL of stock, and season with salt and bouillon to taste. Bring to a boil, and then simmer for 30-40 minutes to blend all the flavors. Stir occasionally, adding water as needed.
Finally, add green onions. Adjust the seasoning and the stew consistency with additional salt and/or water/stock.
Serve warm with desired side dish.
